Salmon Quesadillas


# 1 skinless salmon fillet
# chopped garlic
# lemon pepper to taste
# burrito size tortillas
# Picante sauce
#shredded Cheddar cheese
#canola oil cooking spray


Spray a skillet with non-stick cooking spray or put in a little olive oil. Add the garlic, salmon and lemon pepper - to taste. Cook the salmon over med-high heat, chop & break apart. While salmon is cooking, be sure to remove all the bones. The salmon will cook to a "hamburger-like" appearance. Remove salmon from skillet and spray skillet with cooking spray. Put in the tortilla and add cheese, salsa and salmon then a bit more cheese on top. Put ingredients on only one side of the tortilla and fold tortilla in half. Slightly brown tortilla over med heat until cheese is melted.
